Tate's Page

Hi, I'm Tate Korpi.  Mr. Korpi is my dad.  I am in 3rd grade.  I have a cute, little, silly sister named J.  She's in Kindergarten and goes to Seele with me.  She and I LOVE to eat chicken nuggets.  My mom is sooooo pretty.  I like reading, cooking, and music.  All these activities make me hungry for chicken nuggets.  I LOVE them. 
I have lots and lots of chickens.  They lay eggs, so we always have fresh pink and green eggs.  I help with feeding them and collecting the eggs.  Sometimes when I look at the chickens, I see nuggets!
My dog's name is Cookie.  She has very pretty fur, and she is very sweet, like a Cookie should be.  I like to play fetch with her and to take her for walks around the block.  Sometimes when she sees deer, she takes ME for a walk, but I hang on.

I recently got another dog, a big, sweet girl that wandered up to my dad's friend's house.  No one claimed her, so we adopted her.  She is very sweet and spoiled.  She and Cookie get along great, although Cookie gets jealous.  Her name is Hannah.  She LOVES to bark.

Here's my sister's Award-Winning Strawberry Cupcake Recipe.

 

CAKE

(Makes about 2 dozen cupcakes)

2 cups granulated sugar

1 (3 ounce) package strawberry-flavored gelatin

1 cup butter, softened

4 eggs, room temperature

 2 3/4 sifted cake flour

2 1/2 teaspoons baking powder

1 cup whole milk, room temperature

1 tablespoon vanilla extract

1/2 cup strawberry puree made from frozen sweetened strawberries

 

Preheat the oven to 350 degrees F.  Line 24 muffin cups with paper liners.  In a large bowl, cream together the butter, sugar, and the dry strawberry gelatin until light and fluffy.  Beat in eggs one at a time, mixing well after each.  Combine the flour and baking powder.  Stir into the batter alternately with the milk.  Blend in vanilla and strawberry puree.  Fill prepared muffin cups about 3/4 full.  Bake for 25 to 30 minutes in the preheated oven.

 

FROSTING

(Makes enough for 1 dozen cupcakes)

3 teaspoons of strawberry puree (see above)

1 cup (2 sticks) unsalted butter, firm and slightly cold

Pinch of coarse salt

3 1/2 cups confectioners' sugar, sifted

1/2 teaspoon pure vanilla extract

 

Place strawberries in the bowl of a small food processor; process until pureed.  In the bowl of an electric mixer fitted with the paddle attachment, beat together butter and salt on medium speed until light and fluffy.  Reduce mixer speed and slowly add confectioners' sugar; beat until well combined.  Add vanilla and 3 tablespoons strawberry puree; mix until just blended.  Do not over mix or frosting will incorporate too much air.  Frosting consistency should be dense and creamy.  Enjoy!!

 

My favorite show is "Wizards of Waverly Place."  My favorite song is "Burnin' Up" by the Jonas Brothers.  My favorite food is Chicken Nuggets, of course.  My favorite color is GOLD.  I have fallen into Hot grease (click 1, 2, & 3), tumbled down the stairs twice, stuck a piece of tissue so far up my nose a doctor had to get it out, and last summer I got to go to Disney World!!

Here's my favorite recipe for Sauerkraut!!

1.  Get some Sauerkraut.

2.  Throw it into the trash can.

3.  Get some chicken nuggets.

4.  Enjoy!!

 

Q: Why did the young pirate get thrown out of the movie?

A: Because it was rated "Arrrrrrrr!"

I take piano lessons, and I practice hard everyday.  I have a great teacher.  She is very nice.  I am currently composing a song about chicken nuggets.

Here's my Award-Winning Apple Cake Recipe:

 

CAKE:

1/4 cup cinnamon-sugar mixture

4 apples, chopped small

3 eggs

1 cup vegetable oil

2 cups all-purpose flour

2 cups sugar

1/2 teaspoon baking soda

1 teaspoon cinamon

 

GLAZE:

2 tablespoons butter

1/2 cup firmly packed light brown sugar

2 tablespoons milk

 

Preheat oven to 350 degrees f.  Grease a Bundt or tube pan and coat with cinnamon-sugar mixture.  Mix apples, eggs, and oil with an electric mixer.  Add flour, sugar, baking soda, and cinammon; mix well.  Poiur into pan and bake about 1 hour or until a toothpick inserted in center comes out clean.  Allow cake to rest in pan for at least 10 minutes; invert onto a cake plate.  To prepare glaze, combine butter, brown sugar, and milk in a medium saucepan.  Bring to a boil and cook for 1 minute.  Spoon over cake.  Allow to cool before serving.  Nut lovers can add 1 cup of chopped walnuts or pecans to the cake batter.  Enjoy!

 

Here's my Award-Winning Fudge Recipe:

 

3 cups semi-sweet chocolate chips

1 (14 ounce) can Sweetened Condensed Milk (NOT evaporated milk!!)

1 Dash of Salt

1 cup chopped walnuts

1 1/2 teaspoons vanilla extract

 

In heavy saucepan, over low heat, melt chips with sweetened condensed milk and salt.  Remove from heat; stir in walnuts and vanilla.  Spread evenly into aluminum foil-lined 8 or 9-inch square pan.  Chill 2 hours or until firm.  Turn fudge onto cutting board; peel off foil and cut into squares.  Store loosely covered at room temperature.  Was paper works well to keep layers separated.  Makes about 2 pounds.
